Daily clean records

This article is being written. Short version: a daily-clean record is logged for each station (kill floor, cooler, cut room, packaging) at the end of each shift, by the operator who performed the cleaning.

Why this matters: the USDA expects to see a continuous, dated log of sanitation cycles. Missing days raise questions; Cleaver makes filling them in a 30-second task per station.
